I always write a script, and then if I ended up writing something that was uncomfortable to say like many people have been pointing out about scripts in this thread, I rewrite it or I just wing it. It's very hard to do all of your audio in one take, so don't until you're an experienced commentator. Cuts and editing are your friend and retakes exist when you mess up or talk in a weird manner.
What I also like to do is talk one time through before I even start recording: it's something that really helps. It makes the recording process longer but a perfectionist attitude is the way to go I think.
