What are some good video ideas to do for a channel that is focusing only on a country? This country is Qatar.

Here are some ideas:

-Popular tourist destinations.
-Famous people in that country.
-Food and speciality dishes from that country.
- Laws and customs from that country
- Info about the language in that country.

My advice would be to imagine you were interested in going to Japan (or another country you don't know) and write down all the things you'd be interested in knowing before your trip.
