Too 'Over-the-top'?

If those channels are doing well it might be due to other factors. I know a couple guys who do well with tech reviews but they show themselves in the video. The videos are still professional but that is just one added aspect to it. Maybe people are more likely to sub when they feel someone is talking to them and not simply narrating a video. Do you appear in any of your more recent videos (the past couple years)? I only watched a couple and didn't see you.

But the short answer, like everyone else has already said, is that you cannot over-produce a video. The more professional the better. I just think that appearing in the video might help the audience identify with you more.

I think this is it - I don't actually appear in any of my videos since Ive always felt the video is about the item being reviewed, not about the presenter. But I understand where you are coming from also, and honestly, I think you are right.

I was watching a gameplay commentary yesterday and the girl just started using facecam and I have to say, although the content and entertainment value was identical, I enjoyed the video more with the facecam. It's a weird thing. Anyway, good luck!
 
I have been saying this since day one: Do the best you can! If you are anything like me you probably re-render a 30 minute film to correct one error. An error you saw, but someone else might overlook.

I can't bare to upload a rushed video. It needs to be the best I can do, or it isn't going up!

You have no idea...lol I am a ridiculous perfectionist sometimes. Plus, after I am happy with it I will have several others screen it before uploading and I will take their feedback into account and sometimes I end up re-editing and re-rendering some more. Usually I only do that with bigger projects (machinimas, for example).
 
There's no such thing as too professional, I think it's better to be! I'm also a reviewer, I review games and I like to make them as professional looking as I can :) It seems to work as they're my most popular videos!
