720p is good enough! Rendering and uploading 1080p walkthrough's cost too much time and is imo a waste. I think short gameplay's is fine but not if you're doing full series.
I tend to produce my videos in 720p format as the file size is smaller and in my opinion 720p is a reasonable quality to watch a 5-10 minute clip. I don't feel the need to produce them in 1080p as the time it takes to render and upload will be longer.
I echo the speed of upload sentiment. I uploaded a few videos in 1080p but the amount of time to do it was ridiculous. If you have a schedule, you literally have to factor in how long it will take to upload at 1080p video as 720p is half the time. That's including compressing the raw file which could take tons of time.
I always watch videos in 1080p and never have trouble with the video buffering, which also means that for me, I always upload in 1080p because it doesn't take that long to upload (speedy internet at my apartment, *whoop whoop*). I'd say if you have that option, go with it. scifiriot gave the best reasoning here.
That being said, if I come across a video that only goes up to 720p, I'm not going to not watch it because it's not 1080p. I'm not that much of a snob.
All of my videos are 1080p but you need to understand that if you are rendering to 1080p and not recording in 1920x1080 resolution you are basically wasting your own time because you are just tricking youtube into thinking it is 1080p when it isnt and is not true 1080p quality.
For examples of true 1080p you can check out some of my latest videos, Jackfrags (Best quality ive seen, even original quality) or frankieonpcin1080p. These are examples of true 1080p.
But i upload every video in 1080p unless made unavailable by the game i am playing.
If you arent recording in 1920x1080p i would honestly say just render to 720p because you wont get a good 1080p quality it will basically be tricking youtube into thinking you have a 1080p video through the resolution you render in which can also make it look stretched and poor.
Also if you would like the fastest settings for 1080p sony vegas rendering then just ask me.
I watch videos in 720, even if there is 1080. The difference isn't that great, and with 1080 I often have to sit there while it buffers. I only upload now in 720 as well, it seems to be commonly accepted among larger YouTubers.
