If you're not sure that it meets the legal requirements for fair use, then you should probably determine that before doing anything else. As far as the dispute being valid or not, it's only up to the claimant (Dreamworks) to decide. If they don't agree with the dispute, most likely they will just reject it and it will go back to having the claim on it. They also have the option of taking your video down, but they almost never do that unless you appeal their rejection. Even if that happens, the worst that would happen is your channel gets a copyright strike. You need 3 of those for your channel to be terminated.
You should really read up on copyright claims in the YouTube help section, as well as fair use in general. I recommend fairusetube.org.
