We use Pic Monkey: http://www.picmonkey.com/, it's fairly easy to navigate !

Just open your video with vlc player and reach the specific point which you think the screenshot appeals most and press Shift + S to take screen capture it would go to your picture folder automatically. Then open it any image editor set the crop with 1280x720 px 96 dpi resolution then make it attractive as you wish and upload it...that the simple way other wise design it in any powerful image editor yourself that professionals do.

Take a screenshot, use free editors, there are even online photo editors!

I want to take an image from a video and turn it into a thumbnail? Ideally making it brighter/more colorful.

Is there a really easy way to do this?

There's no easy way of doing anything... Just get a vector editing program and make yourself a thumbnail; If you're looking for easy then you'll be disappointed ...

I go the screenshot route then spice it up with some bright colors in Photoshop. They're not as eye catching as the professional ones I see, but I'm getting there. Just take some time and practice and they should get better with time

The thumbnail doesn't always have to be a still from the video, you can just take a few pictures with funny faces or something for a good thumbnail
I use mostly PicMonkey.com. It's very easy to use, and free (although Premium is an option), but there are many different effects and things to choose from. But for more complex editing Corel PhotoPaint.
