Aim to have descriptions around 200-300 words that describe your videos. Just make sure you're writing in natural English, and at the same time aim to use as many of your tags (that you hopefully researched).
Other then the default stuff, I try and get 200+ words but that isnt always the case. then sometimes I have like 500+ words. more the better as long as its doesn't look spammy
Your desc. should be as along as you want it to be. Some tips I would use: always provide links to your other social media sites, site sources/contributors, and leave a description that helps google/youtube find and rank your videos.
Think of it more as quality than quantity. One thing for sure I try to do is mention the title of my video atleast 2-3 times since I read that helps with SEO
