Go to Google Adwords like you are trying to promote a video and use the "keyword tool" (i think thats what it is called). It is supposed to be for people paying to advertise but it can help with Youtube SEO as well.

For tags, the less the better right? So for a "Beatles Cover Song" video, the tags would be like this: Beatles Cover Song, Beatles Cover, Beatles, Cover Song, Cover, Song? And that's it, is that right?
