I'm not speaking about any channels in particular but it takes a lot of effort to get a channel growing. Once the ball is rolling though, it doesn't necessarily take as much effort as before.
Let's say that you're uploading 4-5 videos a week and you get to the point where you're earning $2,000 a month. You're not necessarily going to earn more by continuing at that pace. A schedule of 2-3 videos a week could possibly keep the same growth.
As to some people seemingly taking long breaks, same deal. It gets tiring to keep up the pace and if they aren't seeing enough earnings considering the amount of time they invest, they have to move on to other projects.
