What do you guys and girls usually do when it comes to tags ? What is your process of choosing them ?

For me I usually write anything related to the video things such as the title itself and the main topic and then I'll write my title in the YouTube search bar and what ever first few results I see I make a tag

You are doing what is generally recommended so you are on the right track.
 
firstly, install tubebuddy if you haven't already. there is a tag search feature which is wonderful: you can find out how popular different tags are and how saturated they are with videos.

i'd recommend the following things:
  • use phrases rather than single words
  • use the most relevant tags first
  • use tags that are part of your title and description
  • have your username as a tag
by following those rules, you're basically set.

Google Trends is your friend, too. You can see what people are actively looking for in relationship to your video topic, as well as get an idea of where in the world your demographic is.
I also recommend the Heartbeat browser extension; it's totally free and allows you to view all the tags creators use on their videos so you know what might be working well for them.
Oh! And as you go, don't forget to check your Creator Studio > Analytics > Discovery page every once in a while, because that actually tells you how people have found you and may help you figure out what will benefit you as you move forward.
 
I will keep it short and straight to the point:
Use related long tail keywords for your video tags that are related to your video if you a small / medium channel. You will never ever rank on first page with new channel for such keywords as "Funny videos".
But have a chance to rank first with keywords such as "top 10 Funny videos May 2017"
