I have never mentioned it for a job interview, only because I have never had a job interview :D I have mentioned it in other interviews though>

Only mention what is relevant during a job interview. Unless you're applying for a job in the entertainment/music industry, or unless your channel is the same subject matter as the job/company, don't mention it. It only puts you at risk to be judged by your content.
I think that's why it worked for me somewhat, since my youtube channel is basically an animation portfolio of my work,
but sometimes it could be that little something that gives an employer a little more of 'you'.

Gamers can talk about their experience with video editing, and entertainment,
vloggers, about video production and lighting,
I suppose youtube gives us all usable skills :)

Advertisers these days have to consider YouTube and social media as a big part of their campaigns, and I've found very few people outside of the YouTube community who know it as well as the people who've created and run their own channels, so that's definitely a big plus if you're looking for a marketing job!

I think if it's relevant to the job you're applying for, then absolutely.
Myself, I do a lot of media work - so now that I'm doing Youtube, I absolutely mention my channel with easy links, especially to similar content than may appeal to the place I'm applying my skills to.

I'm currently applying for a job and there was a small mention of "creating videos" in the job description. I've been thinking a lot about how I should best incorporate it within my cover letter or even resume...any thoughts?

I think if you apply for a marketing job, it can be a plus if your channel has good numbers on there! I might after I hide all of my ridiculous vlogs lol!

For sure! :D I think every job can benefit from an interesting person, and YouTube-rs are interesting!
