Which PC parts list is better?

I would say go with the intel build.

CPU: Save some money by getting an i5-3570k instead (on tiger direct right now for $200) or you could probably get an i7-3770k for the same price as that i5-4670k which would do better for editing. You won't need the newer models because it mainly has improvements to the internal graphics part of the chip which won't be utilized since you are getting a separate GPU.

Motherboard: If you were to go for the 3rd gen intel's that I suggested then you would need the z77 (1155 socket) motherboard instead of the z87 (1150 socket) which could also save you some money. Just make sure it has the features you would want. ie.. CrossfireX and/or SLI. If you want to stick with the 4th Gen Haswell chip then stick with the motherboard you picked.

Storage: I'd spend an extra $30 to get a WD Black 1TB which also comes with the 5 year warranty. The Blacks are made for performance where as Blue were designed more for every day use. I got away with using a Blue for a while when I first started though.

GPU: I personally would go with a GTX 670 over the Radeon HD 7970. They are similar in price, the 670's seem to be a little cheaper than the 7970's but are a little more powerful. 7970's are plenty powerful though and will do amazing, the games that come with Radeon cards are always a big win as well.

Everything else looks pretty good. Do you really need a Blu-Ray Reader?

Also, Will you need a case? And will you need to be purchasing an OS? or do you already have one/them?

Not sure where you were looking for all these parts, but I find Tiger Direct to have better prices and more reliability (compared to Newegg).
