Hi im thinking of making a YouTube channel im wondering what name I should pick AllAboutFlynn-Gaming or FlynnsWorldOf-Gaming

The first one and remove the Gaming one, you dont need to state in your name that you do games, thats what most people do wrong.

Depends. How active will you make gaming videos? Daily, then make different channels, if you got like 2 game vids and 1 fact video a week then mix it in one channel.
