I use Adobe Premiere Pro. Well, I use all of the editing software in the Adobe Creative Cloud suite (Premiere, Audition, and sometimes After Effects).
However, you're looking for simple editing. Premiere Pro (and its competition, Final Cut Pro X) is really simple, but has a bit of a learning curve.
If you have a Mac, I would suggest using iMovie to start out. It's really simple and powerful enough.
If you have a PC, well... uh... Adobe Premiere Elements is pretty good for just starting out. Simple, and is A LOT cheaper than the CC suite. It's actually on sale now for the holidays. (http://www.adobe.com/products/premiere-elements.html). Not as many features as Premiere Pro, but you probably don't need that many features as a YouTuber (most of the time).
If you want a free option for PC, I hear that Windows Live Movie Maker is pretty solid. There are many other free options out there, but I don't know how many are backed by a big company willing to put time and money into ensuring that it works well.
