You gotta do just that though, reach out to as many people as you can, and keep doing it till someone wants an interview. Aim for people who aren't too much above you though, If you chose someone who is not well known then it will be very flattering but if you choose someone who is famous it will just be an annoyance to them.

Aside from simply asking I guess you need to find those people, easier said than done but, you just need to dig into the depths of google to find people who aren't necessarily famous enough to be the first person on a search.

I am not sure what kind of interviews you are going for but so long as the people are interesting you will benifit.

I believe you're at the right place to find people to interview. Assuming you're talking about interviewing other YTers that is? Make an official thread stating what exactly what you'd like to do and you might get some bites!
 
Cart before horse.

You need a purpose to an interview, before you try to find people to talk to about it.
