Trouble Focusing

I make lots of videos with my new Olympus SP-810 UZ and have trouble focusing a lot of the time. It is the same with taking photos. I using take them of Parrots and want to get their full colours out/every detail... any advice? :)
 
Well It's a digital camera. On dslr there is a manual focus function. On handy cam's most of the time there is a small wheel in the front. I don't think that camera has an easy to use manual focus function. Maybe inside the settings there is a manual / autofocus function but I think you will need to focus using the menu and this takes time so you probably will miss the shot and you will be left with an out of focus picture.
 
I think the thing to do when you have an autofocus camera (hopefully with a manual focus function) is to let it autofocus on yourself/subject, then immediately switch to manual. This way it will stay in that focus point and won't just randomly shift to another object.
