My goal is quite lower than yours but I still will most likely not make it. It's just something to motivate me.

Set a other goal like :
100 like on one video
Having 30 unique people to comment on one video
Being in thefront page of search result
Being retweet by a big and famous internet personnality
Front page of reddit (tricky this one)
10 subs have share one of your video
And to answer your question yes, you can get 1000 subs next year.. You may even get more ! But you have to put some good videos outand fast

I don't think there is such as thing as too ambitious 
I think you could do it, just keep making great videos and trying to spread the word as much as possible and you'll be closer to that goal in no time

I think the best goals any YouTuber can make are ones to do with their videos, to have such and such videos recorded and ready for release, to get videos done that you havent done yet and making sure no matter what you get them done, I think that is far more important than setting goals on things you dont have 100% control over like subscribers. You could try setting goals like that Maybe have a goal of getting 25 videos pre-recorded and uploaded by Christmas ready for release in the new year, something like that. Good luck!
