If you can find an indie game that people enjoy that is just taking off then that's a good way to get views and hopefully subs

Your logic leaves out a number of important factors. Less known titles also have less competition for search rank. This means fewer channels creating videos and a better chance your video may be seen when someone looks for the game. COmpare that against the thousands of channels uploading GTA5 footage, and ask yourself if you want to be lost in a sea of thousands, or have a better chance in a smaller pool.
