As others have said, the kids themselves might have a specific interest or specialty that can help you decide what direction to go in. If they aren't sure, maybe think of the types of videos that you'd be willing to shoot and work on, then give them some alternatives to choose from. The field is getting more crowded every year in kids' content so you'll need to give it your own creative twist to separate yourself from the herd.
Another thing is, kids might decide after doing a few shoots that this isn't how they envisioned it going! It might be good for them to get it out of their system and give it a try to find out what they really like doing.
