not sure how to do seo and descriptions

It's all about what people will search on. Think of the terms that people would put in YouTube's or Google's search box and make sure to include that in your description and tags. The more closely you're able to match those search terms, the better. Also, finding unique search terms that other people with your type of content may miss is helpful. There are so many articles and even posts here about it that you can get the hang of it, though SEO is always changing as the algorithms for search change regularly.

So yeah, you'd probably want to include things like "game name gameplay" "game name let's play episode number" and things like that in the tags.

In the description, you don't want to just copy/paste the tags in a list...but you would want to seamlessly include the key concepts in sentences, paragraphs, and so on. "In episode x of [username's] game name let's play, we face [insert major plot point or enemy or whatever is relevant here]". Think of the description as being a small blog post describing your content...so it's important that you're actually describing it. (A lot of people just put social media links in their description but don't actually describe their content...or they might tease the content, but they don't actually describe it. Even if you have a teaser in your description, you actually want to describe what's happening in the video so that YouTube can use that as part of its metadata.)

my experience is that most people have suboptimal tags and descriptions. Even though there are a lot of topics and discussions about it, xingcat is absolutely right that YouTube/Google/etc., change things up fairly regularly so that people don't game the system too much.

my understanding is that YouTube is emphasizing more natural language in descriptions rather than things like keyword density, keywords, etc., That doesn't mean tags aren't important anymore, but I think you should definitely make sure that your descriptions at least have a few lines that describe what's going on, paying attention to things that people might reasonably search for.
 
for many games, let's plays *are* oversaturated. if you can think of things that are different, more niche, more specific, or think of games before they have become too popular, then that should ultimately be better.
