Ok, so I've had time to look into this a bit more.
Firstly, yeah, I have the same "schools" link too but I think everyone with a channel sees it. The main purpose of it seems to be for school network admins to be able to configure their networks to allow access to pre-approved YouTube education channels only (even if the YouTube.com domain has been blocked by the school)
The bit that I'm interested in is how to get a YouTube channel to be on that approved education list. In other words, for schools that give access to those education channels, how to be actually on that list. Well I found it - It's tucked away in small print at the bottom of that page:

To Propose Additional Channels to Add to YouTube EDU
We'd love to hear from you if you find a great educational channel you think schools around the world should be able to access as part of YouTube for Schools. Please first check YouTube EDU to confirm that the channel is not currently included in our corpus of educational. If it's not, please let us know more about the channel by filling in this form."
So I clicked on the link and filled in that form, but when I submit it gives an error "Oops, something went wrong. Something bad happened. Don't worry, though. The Spreadsheets Team has been notified and we'll get right on it."
I'll try again tomorrow, but this looks pretty cool. Educational channels that are accepted will get listed here: https://www.youtube.com/education and will be accessible to schools.

Nice find. I wish you good luck with being accepted in the program!
One possibility - to prevent spam may be they do not allow people to submit their own channels. May be just in case try to apply from different computer which is not associated with your channel (you haven't being using it to log in to YouTube).

Yeah thanks, I'm keeping my fingers crossed. The top channel in my niche is in so I'd love to be accepted too. Yeah, I wasn't sure if I'm allowed to submit my own channel. In my application, I decided to make it clear that I am the owner of the channel to show that I am being totally honest about it and I made certain to be very objective when saying why I thought I deserved to be included
Are you going to try? You know you can submit individual videos or playlists.
btw, when I was looking into all of this last night, I found a support forum where lots of school admins from all over the world were setting up their networks for this (blocking all YT channels except the approved EDU ones) so it does seem to be quite a big project / opportunity.
