Of course. Minecraft is such a creative game that there are almost more options to grow a Minecraft channel than most/any other type of gaming channel. That doesn't mean that the average Minecraft channel will get big, but that's because most Minecraft YouTubers do the same things. Just standard singleplayer/multiplayer footage with nothing people haven't seen 2938219x before. The trick is to do something new.
Perhaps write your own mod and showcase it and make a whole series using it.
Or come up with a fun challenge you can do with friends in multiplayer that no-one's done before.
Or play singleplayer in a unique way that you don't see many people doing - like for example: a rule that you can only stay in each house you make for 5 days, but your goal is to still make the biggest/best house possible, so gradually your houses get bigger and better as you move around the map getting better resources/equipment.
Or come up with a big goal like maybe making a mini version of the IRL town you live in.. all on survival mode no creative. People love big accomplishments, but they love them even more when they can see the whole process of it getting built. Just don't pick a goal so large you won't finish it.
Or hey you know those shows on TV where they make over peoples houses? Maybe you could parody that in Minecraft, find someone who has made a house/structure but isn't the best builder and wants your help sprucing it up, and then each episode you make over one place and turn it epic.
There's so much you can do in a creative game like Minecraft. You have to use your imagination though. Vanilla Minecraft with no creativity added in, isn't interesting to watch because it's been done a million times before.
