is a variety channel a good idea?

Honestly, if I like the personality of the youtuber I can enjoy almost any video he/she is making, so it doesn't really matter to me :)
 
Variety is good for a channel, it brings in many different types of audience. BUT, once you gain an audience, they will want more of something, so be prepared for some videos to do well, and some to not!
 
xJamesDC.... we are already experiencing that. lol or so I think. none of our videos have a lot of views but some of them have like less than 5. and they've been up for weeks.

Yep, that is the problem. But, as you keep grinding on your channel, views will begin to come! Just stick with it!

do you think once a week is enough to bring in the views or not? obviously if we put out more we will get more views but idk how we would do that seeing how we only meet together like once a week for like 6 hours....

The key is staying consistent. If you can only do one video a week, that's fine, just stay consistent to that so your viewers know when a video will be posted. It's ideal IMO to post more than once a week. It draws more attention to your channel along with more content.
