It depends on whether your editing software can utilise the GPU. It needs to be supported by the editor in order to use your GPU for rendering.

Mhmm, Sony Vegas can and does support it.

Cool, a lot of other editors still don't, although they really need to jump onto the bandwagon as with today's powerful GPU chipsets you could get a fair boost to rendering!

Something on top of what has already been said is to record as close to your desired rendering settings. Maybe not so easy if you are recording AVI from games but for camcorders and such, it ain't to difficult.
