First of all, I HOPE this is in the right forum.

I've seen these things where you can pay someone to do SEO (or something) and they will bring views to your channel/video.

Has anyone had experience of using this? Is it okay to use a service like this? How beneficial is it?
 
Depends on what you mean...

Buying subs and viewers is against the Terms of Service of Youtube, and if they find out that you bought viewers/subs your account gets suspended/terminated

Paying companies to improve your Search Engine Optimization exposure is possible, but be sure what you're doing. If it sounds too good to be true, it probably is.
 
I'd try and get your craft where you want it to be before spending money (unless money isn't a huge concern in which case, go for it!) That way if/when you do finance folks finding your videos, they are going to be seeing videos you think will keep them around for more. Also, the basics of SEO can be learned through some searching online and time spent educating yourself.
