Yes live streaming is different. Also I don't think Hangout On Air is in HD unless you have 1k subs.

I think "Hangouts" are never HD, but "Livestreaming" is, and you get that at 1,000 subs. It gives you 1080p, multiple camera angles, auto inprogram-advertisement for your livestream across all your videos while the livestream is online and a bunch of technical stuff...

For your talk show idea it mainly means being able to have higher quality. Multible camera angles means having more than 1 camera in one place. You can have someone over at your place and each of you gets a camera and you can manually switch back and forth between the two of you AND have folks from other places join in.
