Yeah you can definitely tell, it's great when you can scrap the audio if its recorded separately and just re do it not live and not lose the footage

Personally find the likes of "Let's plays" to be boring unless its something like a horror which makes the player Jump, scream etc. Just something to make you laugh

I'm opposite to you, I can stand the occasional jump and scream but the constant screaming that a lot of youtubers do just pisses me off
I guess it depends on preference, lets plays definitely suit generally funny people, such as Jesse Cox

Your brain gets better at everything you make it do. So in theory, the more you practice making entertaining commentary, the better you'll get at it. I hope (cuz that theory is what I'm relying on). I think with LPs, you need to not only practice coming up with interesting things to say, but you should also focus on practicing being able to say those funny things while you're playing the game.
