do your subs and views ever get stuck for a few hours!?

From my experience, there are times it freezes for an hour or two, and then there are times it updates in real time. My best bet is that Youtube removes the invalid views during time it's frozen. When it comes to new uploads, sometimes it freezes for several hours or like half a day.
 
It's just trying to verify. But if you reach the point that YouTube can't keep up with how fast things are moving for you, that's a victory in itself! It is a little sad though that as you get bigger you'll never truly have an accurate count at that moment. Always a day or two before
