Audio, In a bowling alley...

I'm planning a shoot at a bowling alley for a short film I'm working on. There will be two characters facing each other and live bowling going on behind them. I was told the best time to come in and shoot would be when they have leagues. I'm planning on using an external Tascam recorder connected to a Stereo condenser shotgun mic, via boom pole.
Will this setup have the enough ability to capture voices, as well as retain background levels at a decent point, meaning not too loud. Perhaps I should just have the Tascam recording by itself?

I don't know if they've taught you to record a minute or two of room ambiance noise before doing your shoot, it'll help you in editing for keeping the consistency. I believe the word is room tone but I can't remember it :p. I imagine you're doing a single camera shoot so it's even more useful.
 
I know nothing about audio equipment, but it seems like it would be difficult to record anything over the sound of exploding wood all over the place.
 
I used Audio Equipment Before For school, and Your setup is great, Just make sure you know how to work the boom mic, and youll get a pleasant sounding shot. other than that your set!
