Where can you see who has access to your YouTube account?

The only ones I know that do that are Fullscreen and Machinima.
Add SocialBlade (and presumably RPM/Maker) to the list.
Pretty underhand when they claim to not change or interfere with your channel at all.

Is it possible to just give them READ rights, for example?
If you read the description some obtain more rights to change stuff. I don't think you can individually choose which rights a network has however.
 
Yeah I remove any website that has access to my account unless I specifically use it for a purpose. If you're applying for partnership somewhere, remove their access as soon as you've gotten a reply, they don't need access to your account after that. It's just a huge security hole allowing people you don't know to access your information, or sometimes your entire account.

Google APIs doesn't allow that at all. So, it's not even possible to request such permissions

This information is based on what?

Here's an example of one site which can gain access to your videos and in fact edit content just by you allowing them access - http://yt-subs.appspot.com/help/linking
Also on this page they discuss the fact that other sites can also be allowed to have access to your account, and tells you how to check.

Not to mention the hundreds of user reports about networks like Machinima and Maker liking/favoriting and posting things on users channels without notice.
