What does everyone prefer in a video - lots of different shots and view points when talking on front of the camera, or just a straight on shot of the person talking.

Both! Well depending on the video of course. :O!
Sometimes it's nice to see content creators create an opening scene for their reviews and other times it's nice to just get straight to the "talking" segment of it. Really just depends on the video. But it is cool to see a mix of both so it's not the same every time. =]
Ohh, or are you talking about just the video in general?
If what you're talking about can bring the viewer in more by showing shots, viewpoints, and/or pictures or video footage then I tend to love to those while the content creator is talking because it makes the video more engaging. However you can do both depending on the type of video too. Just experiment and see what you like best and think will work. =]
