Theres these new cards from the Windows store that say build a pyramind, house etc etc and you can put a time limit on it and see how good you can build it. If that makes sense lol
Or build your dream home, those always take a long time. If your old enough to drink, everyone loves a good drunk minecraft with friends haha

One idea that might keep you busy and would be super impressive if you can get it to work is to create a giant allspark from the transformers film.
But make it so when you flick a switch it shrinks to a smaller block.
An idea I had awhile ago. Not sure if its possible however but it intrigued me when I made a secret doorway using red torches etc and making blocks fold away. It may mean the cube has lots of holes in so the blocks have space to fold away.
Would likely be lots of sticky blocks that can push and grab to get it to work.

Maybe you could try doing a series where you use a random word generator and try and build what appears.
