Like the ones you can tell were done because they honestly wanted to do a great job so as to respect the original artist. They did it to share the music, and wanted to do it good so that others could enjoy it too.

Oh yeah they do, just take a look at Boyce Avenue, KurtHugoSchneider, Alex Goot or Sungha Jung to name some of my favourites.
