Advice regarding Interviews!

Hello! I am doing a lot of interviews lately and have been improvising a lot. Do any one have any advice on how to structure up an interview?

I generally have a set list of questions to always go back to and then just see where the interview goes

And then when i start i throw it all out the window and improvise the whole thing anyway
