Perhaps those deals look different between Google and the MCNs? I can't imagine an MCN doing direct deal with (let's say) AT&T, and Google profiting the same way.

They definitely wouldn't go without a cut. Ads can't be delivered to videos without AFV (AdSense for Video) so they would get their share.
 
As Shane stated early on, the split is 55/45 for revenue sharing. They own the website, they host the videos, they pay for the bandwidth, they get 45% of the money.
