Ok so I know that posting music in your videos will get you a copyright strike. But how come music with lyrics in them don't?

What are you talking about? It doesn't matter if the music has lyrics or not. You can get a strike if you upload copyrighted music without permission, simple as that.

This is correct. If the music is not technically owned by you then it can lead to a copyright strike. As far as I'm aware, Youtube hasn't perfected the algorithm yet so some songs might just be slipping through the net and not getting picked up, but they still should be.
