The simple answer is OBS or OPEN BROADCASTING SOFTWARE. It's also used frequently for twitch streaming. Editing is a whole other matter.

i find it really difficult to use OBS, the gameplay lags a little for me and i've tweaked the settings over and over again, i find it more easier to use fraps and camtasia

Yes, it does sometimes take a good computer to run OBS.

They all use different stuff based on their preference. There's no software that all big youtubers use that is the best. It just depends on what you want to do and what you like using. I don't think OBS is the only software they use

I know a few YouTubers and they all vary in what recording software they use such as Fraps, XSplit, Bandicam, Shadowplay and I myself use OBS which I find to be the easiest and uses less computer power and of course you can easily add any overlays you like whilst recording which has it's advantages and disadvantages.
