What is this focusing technique called, how is it done?

The camera stays fixed but the lens focuses in. When it comes to actual film techniques and jargon I'm real novice so what is this and how is it done?

Editing. They did a transition to the next shot, and manually focused in on the close up, that's all.
 
It's the manual focus I'm interested in. There is no zoom in or out so how do you manually adjust the focus on the fly like that?

It'll be done with the lens on the camera. On my DSLR (it's a Nikon D3100 if that helps, you can always google a picture) I have an 18-55mm lens on it, and you simply twist the lens to get the appropriate focus levels. Auto focus does the same, but you can't adjust the speed of it.
