However I want to do a video in which people would find not really offensive.

You could always do a rant. Rant videos can be funny and as long as you're complaining about something mundane yet relatable, people could find it interesting and entertaining, and not at all offensive. Good luck!

Essentially, comedy is so broad that there is many ways to approach this.

A lot of the funnier YouTubers I follow tend to go for either topical and recent subjects to make fun of/with, or maybe just point out things that are relatable.

Also, rants are very cool if you make them relatable to the viewer

You could do a skit whereby you constantly have to edit and chastise yourself to avoid offending anyone because these days that seems pretty much impossible.

A skit where you try to make a joke, but have to restart because someone complains, and the s**t hits the fan!
