Probably Sports Games, Grand Theft Auto, and then Minecraft. There are a lot of FIFA channels and Minecraft seems like it will be around forever.

Right now there's a really interesting trend in YouTube gaming. More and more people are choosing to play games that are very highlight-rich. Things like GTAV, League of Legends, DayZ, etc. The really open-ended stuff. That way, a gaming YouTuber can play a game with some friends for a few hours and have enough content for a few weeks, releasing 5-10 minute "highlight" videos every few days or so. It also integrates well with streaming, as people can follow your stream to get the full experience, AND subscribe to your channel to catch the highlights they missed.
