So basically, I am starting a game talk channel and I already have about 40 intricate, but interesting topics on my notepad. All these topics do require a lot of researching, critical thinking, and time to make. Since I have intermediate technical and talking skills, would it be beneficial for me to start off with the smaller topics, and then build up with my channel.

I think you should just dive into the complicated stuff, sure you might not be very good but at least you'll be making videos. Your channel is small now so not a lot of people are going to be watching so if you are going to be making a fool of yourself now is the time. I have, I have contradicted myself, given bad advice and made silly mistakes but I am lot more aware now of things I didn't even imagine were going to be problems now.
Why make it easy on your self if it means you might avoid a mistake now and let it happen farther down the line?
I think doing is the best way to learn and the harder the topic the more you'll be challenged, you might even surprise yourself and be great.

I was actually going to suggest starting small and working your way up before reading Coliwob's reply. It makes sense to throw yourself to the wolves when you don't have a ton of subscribers expecting more from you so you can make all your mistakes early on and learn form them.
That being said, it may be hard to gain new subscribers if your videos show you struggling with the material.
Sorry. I know that isn't much help. I can see both points of view. Maybe mix and match or better yet, choose the topics that interest you the most! Yeah. That way you have that much more passion for the video you are making.
