So my video has black bars on the side..

And I'm okay with that, really I am. Its a recording of a SNES game so it would look like garbage if stretched out.

What I am trying to figure out is, can I edit over those side bars? GameGrumps' side bars are the same color as their background so they seem editable, but when I try to put an image over it in my editor it seems to think that those side bars don't exist..

I would just Google this but it seems I can't find the right words to get Google to understand me.

Yes place a widescreen image underneath your current video track.
Ok, we are getting somewhere lol. So.. normally what I do is if I want an image on my video I just make my canvas on photoshop the size of the video, so.. What is the size of a "Widescreen Image" The Image I tried was 1080p and it just.. fit on the borders of the regular video, as if the black bars didn't exist.

Make a cool background image so the sides look cool and have maybe figures from popular snes games. That would look really cool.

Sounds like your project settings are using the size of the game footage. Try making a fresh project, and make the first footage you put in the 1080p image.
 
If you'd like your footage 4:3 (The square)
Put an image behind your video on the track below it. If you're rendering your footage as 720p you need to set the background image to 1280x720

If you're rendering as 1080p (Which i would not recommend being your gameplay is 4:3) you need to set your background image to that of 1920x1080

the only tips you can really get here are as followed;
1) make sure your project settings are set to a widescreen format (720p = 1280x720, 1080p = 1920x1080)
2) add a nice background image to fill up the blank space. (you could offset the video from the middle so you could have room on one side of the video to add text and maybe links?)
3) do not remove the aspect ratio from the record gameplay (stretching out the video) it will look horrible.

good luck removing the bars :) they can be a very annoying thing :)
Personally I would add some kind of interactive background like the yogscast do where they will have the video to the left and have a nice background behide it all with some pictures, text or links on the right :)
 
I always like the videos where the sidebars are blurry versions of the gameplay being shown (best way I can explain it lol) but I have no idea how to do that.

I know what you mean.. sometimes they change the colour of it as well, personally I find this annoying and very distracting when people do this video any kind of videos.. I guess everyone to their own.
 
Thanks for all the advice everyone :D, My friend ended up just doing it for me, the video I did is in my signature if anyone was curious as to what I was going to do with the side bars xD
