Is monetization the same thing as Adsense?

Basically, to monetize a video you need an adsense account for them to pay you through. That might not be true if you're part of a network, I wouldn't know though.

Adsense is what you sign up with to be payed over Youtube, monetisation is basically a word that means to be able to get money off of something and is just a general term that can be used outside Youtube too. When you are putting ads on your channel you are monetising it, or making your channel be a source of income, Adsense is just the service that the money passes through to get to you :).

This is probably a stupid question, but does "becoming partner" equal monetization? I believe that you can switch ads on or off for individual videos, so what if someone decides not to display any ads at all? Do they still have partner benefits then?

No, you are a Youtube partner (so will only gain partner benefits) only if you monetise your videos, I think you should be able to get away with only monetising one video though and still become a partner. You will have to try it to find out ;).
