How do Adsense know your age?

They know your age through the age you put in your email and youtube.
If you want to open adsense and connect you can but you have to have parent's permission.
Basically you know what it means.... You can just fake your age... If you don't want your parents involved.

Well if it is a no issue to ask for your parents permission then do it. Otherwise just fake it 
but remember that google is the big brother and knows everything... It even knows what you did last summer

Because you need to submit tax information which requires your SSN or EIN which is directly linked to your identity.

They would know your age from the one that you have on your account. Although I believe you can be under 18 as long as you have your parents permission

Also, if you're wanting to get paid into your bank account, you have to give them your details so they can easily find that out through your bank.
Sometimes it states in the terms and conditions that you may open an account from the age of 13 or something if you have permission from a legal guardian/parent. Have you had a read through their terms to check?
