Copyright is a tricky beast. The simple act of writing/creating a song gives you, the creator an automatic copyright over that material. However, you should also protect your work by registering your ownership with the copyright office in your country. This registration makes infringement less likely and gives you a stronger case in the situation where you have to fight a legal battle related to it.
Yes, technically, a video uploaded with your song could be used in that court battle as it establishes the earliest known public record of the copyrighted material. If someone comes along with their version of the song, you can to some degree prove that you wrote it first because it is date stamped on YouTube.
If I was a musician, I'd be making sure that I registered all of my content though. Owning a copyright on content is only half the battle. Being able to prove you own it and protect it is the other half.
