Do you need permission to talk about stories in video games or movies if you are not showing any clips or pictures (if you are monetizing your channel) or is talking about different aspects of a story violating copyright?

In no way is that copyright since it's your own personal review/ opinion. (especially because you're not using anything from the original)

You can also use parts of the original work, if it's for a review because it falls under fair use.

I am a little fearful of using any pictures or clips, as I feel like it is playing russian roulette, everyone says it is fair use, but it seems channels get strikes for it all the time. So I am just trying to make sure I understand everything before I put the effort into making the videos. I will be monetizing, and I know for that it is often stricter, but to what extent I am unsure since everything I seem to come across is vague and does not seem to give a definite answer.
 
You're fine. Your own opinion is fine and no one can claim the voices coming out of your mouth. Well, maybe in some countries..
