I am wondering what would happen with your shows when you unpartner, or partner with another network.

You will lose the Shows feature when your network releases you then you will regain the Shows feature when your brand new network links your account to their CMS. Therefore, I am 99% sure YouTube will not store your show episodes, metadata, and other information about the show(s) associated with your channel.
