Partnering one channel only, possible?

I have 6 youtube channels and all 6 are linked to my adsense account.
Would like to apply to fullscreen or some other network but would like only to get partnered with just 1 of my channels.

1. Can I partner just 1 channel?
2. Will it screw up my adsense account?

I don't understand really how this "partner Network" works yet as I have not really done much research but I would like to partner only 1 of my 6 channels and keep my other 5 linked to my adsense account.

Ask Fullscreen and read the contract they send you. Usually networks demand the right to manage every Youtube channel you use.

Not all do, but this is often true with the larger networks. You can request otherwise. They usually ask for the exclusive right to monetize videos on all of your channels for the duration of the contract.

Well, The problem is that I also have a few websites which I have some adsense ads on so there is no way I could hand over the keys to my adsense to someone else.

Contact them directly (don't apply via the standard link) and ask to see a contract. Then ask them to remove any wording about partnering other channels. Most networks bury some kind of wording in their contract-it's not really enforced, but don't take that chance since its a simple request that they always honor.

This is very good advice. They want your business as it will certainly bring money to them for little to no cost. Just ask them and you very well could get it.
