I had the exact same issue. I waited about 24 hours before giving up. I even tried uploading it again on YouTube AND on google plus page but apparently the default page logo was overriding it.

All right! It has finally updated to the new avatar that I uploaded yesterday. I guess it takes over 24 hours.
