You don't. That's the very nature of the word unscripted.
Some things need to be thought through in advance.
If you are asking how you make a long rambling video more concise - well that's a different matter.
There are two options and whether they are suitable depends upon the nature of the video.
One option is to painstakingly go through it, finding relevant portions and stringing them together. That an be hit and miss.
If its a product demonstration / review or how to type of video a better option might be to just ditch the audio track, edit the video track as needed, then do a voiceover.
